Menu Week of June 27th

It's the end of the month and what a perfect time to clean out the fridge and get rid of leftovers. So all this week you will nothing but leftovers on my menu. Also I am including the reciepe for the Tamale Pie that was asked for last week.

Monday - Leftover Hamburgers w/ Mac n Cheese
Tuesday - Leftover Lasnagna Hamburger Helper
Wednesday - Leftover Grilled Chicken w/ Vegetables
Thursday - Leftover Tamale Pie
Friday - Leftover Spinach Parmesan Pie
Saturday - Leftover Chicken and Rice
Sunday - Leftover Cheeseburger Macaroni Hamburger Helper

Tamale Pie - From the Dinner Doctor

3 cups of corn chips (Fritos), lightly crushed
1 can (15.5 ounces) white hominy with its liquid (I use Golden Hominy)
2 cans (15 ounces each) chili with beans
1 cup shredded Cheddar Cheese


1. Pre heat the oven to 400 degrees
2. Place the corn chips and the hominy in an 2 quart dish. Pour the chili on top.
3. Bake the pie until hot throughout, 20 minutes. Spinkle the cheese on top and bake until it melts, 5 minutes.

Serves 8

Sounds good even if leftovers! Tamale Pie must be yummy. I don't seem to be able to find canned hominy around here. Bummer.

Margaret look in the canned vegetable aisle next to the corn. Its so good and easy to make with vegetarian chili.
